Basic Things
If in a location it is possible to move up and down to a sufficient height, then this is probably the easiest option, just stand at the very bottom or top and just go up/down as soon as the enemy throws a bottle.
But! There are enough places in the game where you can’t move up or down far enough to dodge it. So, if a bottle flies in your face, then:
1) you just need to stand in a defensive stance and press up (I’m not sure which other buttons work, but all except the up button work every other time).
2) If at the moment the enemy runs out with the bottle you are not standing in a defensive stance, then you will not have time to get into it, in this case you can try pressing a punch + kick at the moment when the bottle should hit you, if you get hit timing, then the dodge will work without entering the stance.

It’s all very complicated. The ideal method of dealing with bottles is to stand in a defensive stance throughout the fight and in the case when a bottle flies into your face, use a standard dodge, and in case the bottle flies into your back (the most painful moment) use a double press left/right, which launches something like a footwork that allows you to avoid the bottle in any case.
